Mexican Catering: 7 Authentic Recipes for your Fiesta

We cook a lot of beautiful fast and easy Mexican dishes that can be done very quick and easily.

Some of my friends often call me to ask me for my recipes, so I thought about sharing them here.

They all can be done in less than an hour so you can treat your friends with a Mexican Baquette.

You can find all these ingredients in Australia if you don’t have them yet at home, the recipes are not very spicy.

These recipes are better than the 15 minutes meals of Jamie Oliver, trust me!

Pico de gallo

Cook it in less than 5 minutes

4 tomatos
1 onion
1-3 green chillies or chillie flakes
1 cup coriander
1 Lime

Easy way to cook:

chop everything very fine, add lime and salt

Serves 8. This is an ideal topping or entry that you can serve with cornchips.


You can cook this is less than 5 minutes

3 avocados
1 small onion
1 lime
1 cup of finely chopped coriander
1 chopped chilli

easy way to cook:
smash avocados, chop onion, add lime and coriander, salt and chilli
The tips: the lime avoids that the tomatoes go brown

Optional: add one chopped tomato (some people add one chopped tomato and it tastes delicious but given the fact that we are also cooking Pico de Gallo I didn’t want to put tomato in this recipe)


Mexican meat salad

This is a main course that can be served with the fried beans on the side

1 kilo of beef skirt shreded
2 tomatos in wedges
1 spanish onion sliced
2 cups of lettuce in stripes
3 tea spoons of oregano
2 chipotle chillies if available or any other chilli (even chillie flakes)
1 avocado
3 radishes optional
white vinegar
olive oil

Easy way to cook:
Cook the meat in water with salt and garlic, shred it.
Serve with tomatos, onion and lettuce. Dress with vinegar, oil, oregano and salt

Refried beans

Cook under 5 minutes

2 cans of fried beans
1/2 onion chopped
4 spoons of oil
fetta cheese to decorate optional

How to cook:
bring oil to heat, add onion until it becomes shinny, add beans and fry them slowly


This is a quick version of the original mexican recipe. In Mexico we fry the tortillas and we do not bring them to the oven but after trying this is the best and quickest way to eat chilaquiles in Australia.

2 bags of cornchips (green natural doritos)
1/2 kilo chicken breasts
2/3 cans of tomatos
2 chillies or chillie flakes 2 spoons
mozarella cheese
sour cream

how to cook:
boil chicken breast with salt, onion, garlic and coriander (if you have)
shred chicken
In an oven tray serve the doritos and the shredded chicken
Serve the sauce on top of the doritos and chicken
cover with cheese (as if you were doing lasagna)
serve with sour cream and sliced raw onion on top

How to make the sauce: blend tomato cans with onion, salt and chillies
If I am in a hurry I just add the cans of chopped tomato with a little bit of salt (it also works but I like it more when I spend the time to make the sauce).

Paloma Tequila

solo softdrink or any other lime or lemon softdrink

ice the glass with salt
pour one serve of tequila
add softdrink
add 2-3 drops of lime


Flan Horneado de Queso (Flan Napolitano)

1 can of condensed milk
1 can of evaporated milk
100 grams of ricotta cheese
3 eggs

blend everything together put in the oven at 180 degrees for about 50 minutes
